There is a fantastic ode to beets in the Food section of the Vancouver Sun today along with several recipes. There are two that I can't wait to make: Beet Cranberry Soup and Chocolate Beet Cake. That's right, no type-o, beets in a chocolate cake. The subtitle says "If you can have carrot cake why not beet cake?" Good question!
